Our Wines

Our wines are a joy to make.
every member of the family gets involved, they are produced right here on our farm.
They are the product of simplicity.
We hand pick the very best vineyards we can obtain, they are made in tiny parcels with a no compromise approach, little to no additions, mostly whole cluster fermentations with transfers made via gravity, excellent barrel maturing conditions, ruthless barrel selection & bottled without fining or filtration. Our aim is to produce wine we want to drink and keep for the future!

2022 Vintage Review from Mike Bennie - The Wine Front

Dero by Phase Three Wines 2022

This release is a blend of five vineyards, Barossa and Eden Valleys, and is the only wine to come out of this project for commercial release in 2022. While the five vineyards combine, there is also a barrel of 2021 Dero in the wine, a barrel of 2021 Le Bomb and a splash of pinot noir. There’s a lot of winemaking and blending that goes into this wine, dare we say a bit reminiscent of the Sami Odi motif, albeit not quite the mathematics there. That being said, big effort to get five vineyards, largely whole bunch, to ferment away and then blend and add in a parcel that spends extended time on skins, plus the cellared wine, and the pinot noir, all together and coherent and 13.9% alcohol. Only eight barrels of sixteen produced made it into this wine.

It’s a ripper. It has this levity and freshness that Barossa shiraz can miss, yet maintains this swarthy depth, grunt and lavish array of spice, wood seasoning, herbal inflection, ripe and less ripe fruit character, Italianate tannin and general crunch. Scents of red berries, black cherry, cocoa powder, Aussie bush, sandalwood and Chinese five spice. Flavours similarly set, gnarly in the weave of sandy tannin with a cool undertow of maraschino cherry juice spiked with a orangey tang, orange amaro and crushed rock minerality. A reserved, almost nebbiolo-like tension and compactness. Sheesh, gulp away!

PHASE THREE WINES

Phase Three...

Our philosophy is this – we make wine to drink, and we are happy to share a little…

The third phase of our journey and life together.

After taking the leap to leave our wine retail & food industry jobs to start our own small food business. The desire was ever increasing to have more time to spend with the family.
After many arduous months of organizing, finalising and selling up.

With no real plan other than to plant a few Truffle Inoculated Oak Trees, but as yet no property to do it. We packed the car with six year old Laura, one week old George, two dogs & a budgie and headed to the Barossa to begin our Third Phase

THREE PHASE WINES

Our farm

We are fortunate to now be the caretakers of this beautiful local heritage listed blue stone cottage built in the late 1800’s.  Our 38 acre property is in the G.I of Eden Valley and in close proximity to some very esteemed vineyards.

In our short time here we have planted three small vineyards plots using cuttings from these local vineyards that will become our estate wine. In addition, we have planted two plots with Truffle Innoclated French & English Oak along with Hazelnut trees and Pine trees.

The remainder of the property is dedicated to native wildlife and sheep grazing and any other animals my wife decides to bring home.
