“Le BOMB” is a 625kg parcel of 35-year-old Ebenezer Shiraz with 2% co-fermented whole clusters of Eden Valley Viognier.
This wine was open fermented with indigenous yeasts, 10% as whole clusters & hand plunged twice daily. Post-fermentation, Le BOMB was left on skins for a further 2 weeks then put to a seasoned 2014 Sirugue barrique for 17 months.
This batch of wine filled two Barriques. But throughout the year topping and tasting in the cellar. This particular barrel always appealed to us, so we decided to bottle it as a single barrel to let it run its own race.
Le BOMB is unfined and unfiltered with only a small amount of S02 added prior to bottling -248 Bottles filled.
It’s unashamedly Barossa with charm and a slick edge.
